Why Romanian Restaurants Are Adding These Wines to Their Lists

Italian wines from Veneto selected for restaurant wine lists

A wine list is not a shop. Nobody stands in front of it for twenty minutes comparing labels. It has to work fast — for the guest deciding between two glasses, and for the owner who needs it to sell without becoming a second job.

That's a different brief than what most importers are set up to deliver. Here's what we've learned actually matters when a restaurant, hotel or pension in Romania is choosing who to buy from.

Small producers, but not unreliable ones

Everyone likes the story of the small family producer. Far fewer people enjoy finding out mid-season that the small family producer is out of stock until next harvest. We work with a short list of Veneto growers — Moletto, Tommasini, Le Baite — chosen partly because they're small enough to have a point of view, and partly because they can actually keep a restaurant supplied through a full year, not just a launch month.

A range that covers the table, not just the cellar

A workable list needs an easy glass-pour white, a food-friendly red that won't fight with a Romanian menu, something with bubbles for the table that orders "just to celebrate," and one or two bottles with enough of a story that a server can sell them without a script. That's roughly how our own range is shaped — from an easygoing All'Origine white through structured reds like the oak-aged Cabernet and the award-winning Colmello Rosso, up to a Prosecco line that covers Extra Dry, Dry and Rosé.

Certifications that mean something to guests, not just to a label

Bio, vegan and low-intervention wines aren't a niche anymore — guests ask, and increasingly they ask first. Having a genuinely certified bio option (not just a label that implies it) or a certified vegan red gives a server something specific and true to say, instead of a vague gesture at "natural."

Volume pricing built for a wine list, not a wine shop

HORECA terms — case pricing, glass-pour-friendly margins, sample bottles before you commit — are handled separately from our online retail prices, on a per-account basis. If a bottle only makes sense at retail price, it doesn't make sense on a wine list, so this is worked out with each venue rather than fixed to a single list.

If you're building or refreshing a list

We work directly with restaurants, hotels and pensions across Romania — tastings, sample bottles, and a wine list that's built around what your kitchen and your guests actually want, not a generic importer catalogue. Reach out at salut@chateaucalu.com and we'll put a shortlist together for your menu.
